I always felt the CCR song Green River would've been good for him to sing, along with Brooke Benton's classic Rainy Night In Georgia.
Other songs that come to mind are Charlie Rich's The Most Beautiful Girl In The World, Chuck Berry's Back In The USA, the Johnny Cash hit Sunday Morning Coming Down, and the gospel classic by Hank Williams I Saw The Light.
NOTE: Elvis did sing a short 1 liner of Most Beautiful Girl in Las Vegas, Feb 1974, and according to Joe Tunzi (Elvis Sessions III) Elvis was supposed to have recorded Rainy Night In Georgia in the studio in January 1977, but the session was canceled.
