"Slow Hand" which was done by the Pointer Sisters-I think Elvis would have been excellent on it.
"Fire" which has already been mentioned.
"Heartache Tonight" which the Eagles did originally another one I thought Elvis could have nailed.

That would have been cool. When I was growing up my Dad was a huge Jerry Reed & Chet Atkins fan. Not to mention that Dad was/is a ferocious picker in their respective claw/fingerstyle.
