According to Ernst Jorgensn, Al Jackson played the drums and Bobby Manuel played guitar. I believe that these guys were in-house musicians for Stax. This was also the same night that Elvis left after only 4 hours, having recording absolutely nothing due to some mike issues.

it was more than just Mic issues that was bothering Elvis that night...he was having a real hard time with life and just was not motivated or interested in recording when his heart wasn't in it. If you read, the place was crowded with people just everywhere, smoking, and all kinds of stuff.(n)
